I would second the vote for MathPix as a tool for this project.
If you want to avoid Latex - i think the only other option is doing mathml in a word doc which can also use Mathpix as a tool.

Mathpix.com<http://mathpix.com/> is the easy button for accessible scientific notation. Although they may need to alter their verbosity settings to indicate when there’s a capital letter in equations, if they’re present. It has DOCX exporting and creates LaTeX you can copy and paste into Canvas.
Had this issue with a blind Grad student in GIS working with genome equations and we had to figure out how to make it readable to their screenreader. The book was available through a web page created by the professor, and we played with screenreader configurations to announce a beep/click to indicate capital letters.

Subject: [Athen] Data Science notation
Hi
We have a student who are doing Data Science who need to have their documentation OCR’d to be read with Jaws. Does anyone have any tips or tricks on how to do the scientific notation. I do not want to start using LaTeX so any other ideas would be great.
Thanks
Lorraine
